95% Chardonnay and 5% Pinot Nero from organically-farmed vineyards in Sergnana, in Provaglio d'Iseo, between the more gentle slopes of the foothills of northern Franciacorta. The grapes are gently pressed and aged for 6 months in stainless steel tanks before aging 60 months on the lees in the bottle which results in an elegant harmony between fresh acidity and a sensous lengthy full finish.

- Andre et Michel Quenard Cremant de Savoie Brut
100% Jacquère from 50-year-old certified Haute Valeur Environnementale vineyards in Savoie. Savoie is a picture of fairy-tale perfection: snow-capped peaks, green rolling hills, wildflowers, and cold, sparkling mountain streams. Once the grapes finish primary fermentation they are bottled and aged on the lees and after disgorgement, a house liqueur de tirage is added before final corking of wine.
- Champalou Vouvray Brut "Méthode Traditionnelle"
100% Chenin Blanc from 20-year-old estate vineyards on clay, limestone, and siliceous soils. The Champalou family embraces sustainable farming while also integrating the use of the lunar calendar more commonly associated with organic viticulture. The wine is fermented with indiginous yeasts and then aged on the lees in bottle for 24 months before disgorgement and a dosage that results in very low residual sugar. The Vouvray Brut "Méthode Traditionnelle" is a blending of three different vintages per cuvée.

50% Chardonnay and 50% Malvasia from vineyards planted at over 800 feet above sea level in Friuli Venezia Giulia Carso. The wine is aged for 12 months in old barrels and then aged in bottle for 1 year before disgorgement. Note there is zero dosage, so this is sharp, mineral-driven, focused, and exquisite.

100% Chardonnay from certified Haute Valeur Environnementale 40-year-old estate vineyards from the chalky terroir of the premier cru village of Vertus. Fifth generation winegrower brothers Charles-Henry and Emmanuel Fourny sustainably farm nearly nine hectares of vineyards and have been carrying on the family winegrowing tradition which dates to 1856. This cuvee features partial malolactic conversion and ages 24 months on the lees resulting in a blend that has both roundness and freshness. "
